About Defiance Beef

Defiance Beef: Better Beef, Straight to Your Door
At Defiance Beef, we’re passionate about bringing families the tastiest, most tender beef you’ll ever grill, roast, or burger-up. Unlike most beef you find at the store, which comes from a handful of giant companies controlling over 84% of the U.S. beef industry, our beef skips the middleman. We raise it, select it, and deliver it directly to your home—100% U.S.-born, bred, and harvested right here in the Midwest.

FAQ - Beef Shares Explained
How does online ordering work?
Ordering a beef share is simple and straightforward. Start by selecting the beef share option you’d like on our website and proceed through checkout. The amount paid at checkout serves as a deposit, with the final total varying based on the weight of your animal and the cuts you choose.
Once your deposit is received, you will get a confirmation email securing your meat share reservation. We will reach out and confirm processing date.
Approximately two weeks before your scheduled pick-up, you will receive detailed emails about your custom butcher options, followed by a call from either our team or our processor Montgomery Meats to finalize your order. The final price and invoice will be sent the week before pick-up, and the remaining balance must be paid in full before you collect your meat or before we ship.
If you have any questions throughout the process, we’re here to help!
How much beef will I get with each option?
A whole beef share starts with a 1,450 lb. live animal, which yields over 500 lbs. of take home weight after butchering. After dry-aging for 21 days, expert butchers process the meat.
Whole Beef Share → Yields 500+ lbs. of packaged beef
Half Beef Share → Yields 250+ lbs. of packaged beef
Quarter Beef Share → Yields 125+ lbs. of packaged beef
Final weights may vary based on the cuts you choose and the final size of the animal.
How is the meat packaged?
All meat is vacuumed sealed and frozen solid.
How much freezer space will I need?
When purchasing a beef share, it’s important to have enough freezer space to store your meat properly. A good rule of thumb is 1 cubic foot of freezer space per 35-40 lbs. of packaged meat. Here’s how much space you’ll need based on your share size:
Whole Beef Share (~500+ lbs. packaged meat) → 12-16 cubic feet (A large upright or chest freezer)
Half Beef Share (~250+ lbs. packaged meat) → 6-8 cubic feet (A medium-sized chest freezer)
Quarter Beef Share (~125+ lbs. packaged meat) → 3-4 cubic feet (Can fit in a standard freezer with some organization)

How much does processing cost?
Processing is a separate charge from the price of a live animal and is based around the live weight of the animal. Processing costs $0.69/lb on the live weight.
Typically, for a 1450 lbs animal you will expect to pay for processing:
Quarter - ~$250

Add-ons like making the ground beef into patties or adding cheese are additional cost. Shipping is not included in the price of processing.
